Roasted Delicata Squash with Maple-Mustard vinaigrette

For the Squash:
  • 1 medium-sized delicata squash
  • 1½ tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray
For the Dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup (not pancake syrup!)
  • 1½ teaspoons Dijon mustard
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  1. Preheat your oven to 400 degrees. Lightly grease a rimmed cookie sheet with cooking spray.
  2. Cut the delicata squash in half length-wise and scoop out the seeds using a spoon. Slice the squash into ½-inch half-moons and place onto the cookie sheet. Drizzle the olive oil and sprinkle on the salt and pepper – toss with your clean hands to coat and spread the squash out into a single layer.
  3. Pop the cookie sheet into the oven and bake the squash for 20-25 minutes, flipping the squash over halfway through cooking.
  4. While the squash is roasting, make the dressing. In a jar with a tight-fitting lid, combine all dressing ingredients. Place the lid on the jar and shake vigorously to combine.
  5. When the squash is roasted, transfer the squash to a large bowl and pour over the dressing. Toss gently to coat.
  6. Serve immediately!
