Ultimate Blueberry Muffins

Simply A (RD) Foodie: Blueberries are a great source of vitamin C, which is important for wound healing!
Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs, separated
  • 1 stick unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup skim milk
  • 1 pint fresh blueberries, washed and picked through to remove stems/smooshed berries
  • 1 tablespoon granulated sugar + ¼ teaspoon ground cinnamon
Instructions
  1. Preheat your oven to 425 degrees. Line a jumbo muffin pan with jumbo muffin cups.
  2. In a bowl, combine the flour, baking powder, and salt - whisk to combine. Set aside.
  3. Separate two eggs, putting the yolks into one bowl and the whites into another. Beat the whites until stiff peaks form, about 1-2 minutes. Set aside the beaten egg whites.
  4. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together until light and fluffy. Add in the two egg yolks and the vanilla extract. Beat until combined.
  5. With the mixture on low, alternate adding in the flour mixture and the milk, starting and ending with the milk. Remove the bowl from the stand mixer.
  6. Add in the egg whites and gently fold them. When the egg whites are just barely combined, add in the blueberries and fold them into the batter.
  7. Portion out the batter evenly into the muffin cups. Sprinkle on some cinnamon sugar! Bake the muffins at 425 degrees for 10 minutes and then reduce the temperature to 350 degrees and bake for an additional 10 minutes until the muffins are completely baked. Let the muffins cool for five minutes, then transfer them to a wire rack to cool completely!
