Savory Oatmeal with Spinach and Fried Egg

  • 1½ cup low sodium chicken broth
  • ¼ teaspoon black pepper
  • ¼ cup steel cut oats
  • 1 slices bacon
  • 2 cups fresh baby spinach, washed and dried thoroughly
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon dijon mustard
  • 1 egg
  • Cooking Spray
To cook the oats:
  1. In a small saucepan set over medium-high heat, bring the chicken broth and black pepper to a boil. When the broth comes to a boil, add in the oats, stir, and reduce heat to a simmer. Cook for 25-35 minutes until the oats are tender. While the oats are cooking, prepare the toppings.
To cook the toppings:
  1. In a skillet, cook the bacon slice until crisp. Remove the bacon from the skillet and put it on a paper towel to drain - when cool, crumble the bacon into big chunks. Pour off all but a ¼ teaspoon of bacon grease.
  2. Heat the skillet with the bacon grease over medium heat. When the bacon grease is hot, add in the spinach. Cook for 2-3 minutes until wilted. Turn off the heat and season with salt, pepper, and mustard. Remove the spinach from the skillet. Wipe the skillet down.
  3. Return the skillet to medium-low heat. Coat the bottom of the skillet with cooking spray. Gently crack the egg into the skillet. Allow the egg to gently cook - the whites should begin to set and the yolk start to solidify around the edged. Gently flip the egg over and cook for an additional 30 minutes to fully set the egg white and start to set the egg yolk.
To assemble:
  1. Pour the oats into a swallow bowl. Top with a layer of spinach, the crumbled up bacon, and the fried egg. Dig in!
