Ingredients
3 cups rolled oats
1 cup dried cranberries
½ cup pecans, chopped
½ cup sliced almonds
½ cup honey
¼ cup brown sugar, packed
¼ cup vegetable oil
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon vanilla
Instructions
Preheat your oven to 300 degrees. Line a rimmed baking sheet with parchment paper.
In a large bowl, combine oats, pecans, and almonds. Stir to combine.
In a small bowl, combine honey, brown sugar, vegetable oil, salt, cinnamon, nutmeg, and vanilla. Stir thoroughly to combine.
Pour wet ingredients over the dry ingredients and toss to coat. Pour the oats onto the baking sheet and spread out in an even layer.
Pop the baking sheet into the oven and bake for 30-35 minutes, tossing halfway. Remove the baking sheet from the oven, cool slightly, and break granola into clumps. Cool completely before enjoying!
