How can time fly so quickly?!
For Holy Week, my crew goes completely vegan – no meat, dairy, or eggs. It is a good challenge and a way to focus for the main event this coming Sunday. It may seem like a challenge, but we have a bunch of awesome recipes that will help get us through!
Snacks:
The weather is going to be beautiful this week, so I’m definitely going to make a bunch of this awesome Cilantro-Free Guacamole. It’s a perfect snack to set out when the crew gets together to dye Easter eggs.
This White Bean Hummus not only is an amazing snack, but can be used a hundred different ways – salad dressings, sandwich spreads, or as a sauce for grain bowls. It’s versatile and a complete breeze to make!
Mains:
These Hummus + Grilled Veggie Wraps are an easy dinner that can be pulled together in no time. White bean hummus is spread on a whole wheat tortilla and topped with whatever veggies you like!
Want a chop-dump-walk away recipe? This Lentil Soup is veggie- and fiber-packed and literally can be thrown together in the afternoon and left simmering on the stove. Weeknight dinner in a flash!
Who doesn’t love Beans + Rice? This dinner is on the table in under thirty minutes… dinner savior.
Just because it’s vegan, doesn’t mean that it has to be boring! This colorful Roasted Vegetable + Farro Grain Bowls are nutritious and totally delicious.
Craving Italian? White Bean and Mushroom Meatballs to the rescue! They are super yummy and even your most stubborn carnivore is gonna love them.
