Okay, we officially have one week of summer left… (*sob*)
I cannot believe it. Like how did three months magically fly by?
But as I reflect back on this summer (my first summer that I was officially employed!), I realized that we ate SO well. Because of we have one one week left, I decided to pull together a Summer Recipe Flashback as a “last chance list”… please excuse me as I run to the store and buy all the remaining blueberries, sweet corn, and tomatoes!
The Breakfast Foods:
These Blueberry Muffins… Basically my summer in muffin form.
Fresh corn takes these muffins from blah to brilliant! Plus, they muffins are under 150 calories (a breakfast win!).
The Sauces:
Basil Pesto is the quintessential summer sauce…. and you know how much I love pesto pasta!
But Greek Tzatziki is definitely a delicious runner-up! Cool, creamy, and perfect as a dip or a sauce.
The Veggies:
Breaded zucchini wedges unite veggie lovers and veggie haters!
Roasting tomatoes is so simple and brings out the their natural sweetness (trust me, this will be your new weeknight go-to veggie!).
The Mains:
E’s most popular recipe! BBQ Chicken Pizza uses up all the leftovers hanging in your fridge (and brings the barbecue inside!).
The Sugar:
Whole Wheat Chocolate Chip Cookies are an interesting twist on the classic… while the flour doesn’t make them any healthier (still a treat!), it does add a nice nutty flavor to the cookies.
And Pavlova Cake is summer in dessert form – crispy meringue topped with clouds of whipped cream, and fresh berries make this summer incarnate!
