It’s official. Week One of Vegetarianism 4.0 is done.
And it completely flew!
Every year, I approach this challenge with some apprehension because I never know what to expect. But this week showed that I have come so far since my last attempt four years ago.
You know, the year when I dedicated one week to one dish each week. The year when I ate quiche for 7 days straight and my cardiovascular system was not very happy.
Every year has been an improvement and from the looks of this week, this year is going to be the best ever!!
This week started out with family favorites of farro salad (dressed with homemade pesto and studded with roasted asparagus) and Ellie Krieger’s Aromatic Lime Peanut Noodles.
Then we whipped out this twist on a classic for St. Patrick’s Day… roasted cabbage = the best way to cook cabbage.
Finally, we rounded out the week with Greek Leek Pie (Prasopita). All the taste of spring in a perfect square of deliciousness.
This past week was full of vegetarian awesomeness… now what to make this week?
