This year marks the fifth year that I go vegetarian for Lent.
For the next forty days, I will give up all beef/pork/poultry/fish… and hopefully refocus.
This year has been insane – I marked my one year as an RD, I traveled a bunch, and I switched jobs. With all the change and happy chaos, I feel like my eating/sleeping/life regimen has gotten out of whack.
I am hoping this vegetarian journey ahead of me will change that.
I hope that it will make me more mindful. Taking the moment in the cafeteria to survey my options instead of grabbing the first thing I see will help me make better choices. Actually sitting down with my family at dinner and FOCUSING (not thinking about the millions things I need to do tomorrow).
I hope that it will make me stop, take a step back, and connect. My mom and I hard-core meal plan these forty days, making sure that we cover everyone’s vegetarian favorites (and add some new ones into the rotation. I love spending that time with her.
I hope that it will inspire me. Don’t get me wrong, I love vegetarian meals. We try to go meatless at least one night a week in my house, so we will definitely be eating well. But I love to take this Lenten period as a challenge – how can I make satisfying, interesting meals for my family?
I hope that these next forty days change my eating habits, but also change my mindset… and that I come out of this experience a bit more mindful, more connected to those around me, and a bit more inspired.
