I don’t know when I fell in love with avocados, but I am sure glad that I did!
From guacamole to avocado toast, I try to squeeze this green fruit into my diet as much as I can. Hey, it’s a good source of healthy fat!
My sister, my mom, and The YIA are also obsessed with avocados (my dad… not so much) and we usually just mash them quickly with lime and salt before devouring (The YIA can eat two whole avocados in one sitting if we let her!). While this rustic, chunky dip is great with a glass of wine on a family-only Sunday afternoon, I was thinking how to transform our favorite dip into something more elegant.
Which made me think about my food processor.
Instead of mashing the avocados roughly with a fork, I decided to pop the dip ingredients into the bowl of my food processor and blend everything ’til it was smooth. And we were hooked! The resulting dip was super smooth but still had all the delicious flavors of the original. Definitely a more refined taken on the old family stand-by.
Plus it was still super easy!
I just tossed the flesh of two ripe avocados into the bowl of a food processor fitted with a steel blade.
Yum!
Sprinkle in some kosher salt.
And add a BIG squeeze of lime juice (about half a large lime). Then all you need to do is turn the machine on high and blend until smooth. Taste the dip and adjust seasonings as needed (mine needed a bit more lime!).
Place the dip into in a bowl…
… and dig in!

- 2 ripe avocados
- ½ teaspoon kosher salt
- Juice of half a large lime
- In the bowl of a food processor, combine avocados, salt, and lime juice. Turn the food processor on high and blend until smooth. Taste the dip and adjust seasonings as needed. Spoon dip into a pretty bowl and serve alongside pita chips, corn chips, or raw veggies!
