Hi, my name is Catherine!
I have ALWAYS loved food and cooking.
From standing on a chair and helping my grandma (The YIA) cook dinner to mashing acorns and berries for my backyard “cooking show” to making super-sized cupcakes for high school birthdays, food and food preparation has always been a hobby of mine.
Until I went to Italy…
Four months of independent living in a place where food was unbelievably fresh, surprisingly cheap, and divinely delicious, I decided to take the leap from the current career path I was working towards to pursuing a degree in Nutrition and Dietetics. Cue scary music and months of grad school applications, tears, anxiety, elation, and excitement. By the time I was ready to graduate college, I was taking my hobby of food and cooking and turning it into a real career.
Graduate school was an amazing experience.
I not only learned everything about food and nutrition, but I made some amazing friends.
And I started a blog…
The previous incarnation of what you are reading now.
It was my creative outlet in between studying for exams, volunteering in the community, and writing my behemoth of a thesis.
It was where I found my voice, honed my cooking skills, and learned how to take food photos. It was written on two different laptops, outlived one frosting-covered iPhone and one slightly food-covered point-and-shoot, and welcomed my new (not-frosting-covered) iPhone and my DSLR camera.
It was my life for three years.
But then it happened…
All my work, hopes and dreams became a reality!
I became a Registered Dietitian.
It was official… I graduated to the next stage of life.
So this is me:
My name is Catherine.
I was a Grad School Foodie.
I am a Registered Dietitian.
I am a lover of good nutrition, good food, and the quest of finding balance between both.
I am Simply A (RD) Foodie.
And this is my life.
