Yes, avocado toast.
Yes, I know that I’m, like, five years behind when it comes to food trends.
But, guys, avocado toast is DELICIOUS.
HOW DID I MISS OUT UNTIL NOW?!
After working a super long weekend at the hospital, I came home last night and wanted to eat something quick so I could change into my pj’s and watch half an episode of Fixer Upper on Netflix before passing out at 9:30PM.
(PS – is anyone else as obsessed with Fixer Upper as I am? Again, I know that I’m like five years behind…)
Avocado toast to the rescue!
10 minutes, four ingredients and I had an easy dinner.
It starts with a piece of toast.
I love using whole wheat toast for avocado toast – I think it holds up well (plus it’s a great source of fiber!).
Layer on some slices of ripe avocado.
And mash the avocado with a fork.
You could totally pre-mash the avocado in a bowl or on a plate and then spread the mashed avocado onto the toast, if you want. But after a long day of work, I use the method that gets food into my mouth the fastest.
Sprinkle the avocado with some kosher salt and some black pepper.
Dinner’s served!

- 1 slice whole wheat bread, toasted
- Half a ripe avocado, sliced
- Salt and pepper to taste
- Place toasted whole wheat bread on a plate. Place avocado slices onto the toast and mash with a fork until smooth. Sprinkle over salt and pepper. Enjoy!
