Edamame Succotash

Simply A (RD) Foodie: Did you know that edamame is just another word for fresh soybeans? They are a great protein food that is delicious on its own or in this succotash!
  • 2 teaspoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 medium-sized bell pepper (red or orange), finely diced
  • 1 cup frozen edamame
  • 1 cup frozen roasted corn kernels – regular corn kernels work here too!
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 medium-sized Roma tomato, diced small
  • 2-3 teaspoons rice wine vinegar
  1. In a skillet, heat olive oil over medium heat.
  2. Add in the onion and cook until just soft. Add in the garlic and cook for approximately 30 seconds or until fragrant. Toss in the bell pepper and cook until soft, 1-2 minutes.
  3. Add in the edamame, corn kernels, salt, and pepper and stir to combine. Cook the veggies 2-3 minutes until edamame and corn kernels are just barely warmed through.
  4. Add in the tomato and rice wine vinegar and continue to cook for 1-2 minutes, or until the tomato is warmed through.
  5. Serve alongside your grilled favorites, toss into salads, or eat it by itself. Enjoy!
