Stuffed Baked Apples

Simply A (RD) Fact: Apples are a great source of soluble fiber, which is important for heart and digestive health!
  • 3 medium-sized apples - choose a firm, sweet apple (like empire)
  • 3 tablespoons quick cooking oats
  • 2 tablespoons packed brown sugar
  • 2 tablespoons cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Cooking spray
  • Water
  1. Preheat your oven to 350 degrees. Spray a baking dish with cooking spray and set aside.
  2. Cut apples length-wise and remove the core and stems - this should make a little divot in the middle of the apple. Arrange in an even layer, cut side up, in the baking dish.
  3. In a small bowl, combine oats, brown sugar, butter, cinnamon, and nutmeg. Using your clean hands, work the butter into the other ingredients. Evenly portion out stuffing into divot.
  4. Pour some water into the bottom of the baking dish (just enough to barely cover the bottom) and bake the apples for 30-40 minutes or until the apples are tender and the filling is brown and bubbly! Serve alongside some whipped cream or ice cream, but these apples are great by themselves too!
