I love summer because that means I call eat all my absolutely favorite foods.
Ice cream.
Watermelon.
Grilled Chicken.
S’mores.
Fresh Cherries.
Fresh Peaches.
Caprese Salad.
And….
GRILLED VEGGIES.
Yes, ladies and gentlemen, grilled veggies are my jam. There is something that happens when you grill veggies. They become super sweet and delicious with a hint of char and smoke. They are the perfect summer side, are the star in pasta salad, and are the perfect addition to vegetarian sandwiches.
Which is how I ate them this week!
I smothered a whole wheat wrap with homemade white bean hummus and then layered on some grilled veggies and I was very, very happy. This sandwich is super quick if you use leftover grilled vegetables (when the grill is on, I go to town and make enough vegetables for 2-3 days of meals) but even if you have to grill them right now, the wrap is ready in less than 15 minutes (yay!).
It starts with a good whole wheat wrap.
This is an eight-inch whole wheat flour tortilla. It is perfect for a lunch-size wrap!
Dollop on 2-3 tablespoons of homemade white bean hummus. If you don’t have any homemade hummus, regular store-bought is fine!
Spread out the hummus evenly on the wrap. Then start layering the veggies! Use whatever vegetable that YOU like – that’s what I love about these wraps. I can grill up a bunch of different seasonal things and let everyone customize them the way they want.
I used grilled zucchini that was cut length-wise.
And some grilled red bell pepper.
Finally, some grilled grape tomatoes. I just skewered them, coated them in olive oil and seasoning, and then grilled them on the indirect heat (the “off” side of the grill) until they blistered and slightly shriveled.
I added a bit of fresh thyme on top of the veggies for a fresh edge. Some chopped basil would be yummy too!
All that’s left is to roll it up (I like untucked ends!) and cut it in half.
And dig in!

- 1 8-inch whole wheat wrap
- 1-2 cups grilled vegetables, whatever you like!
- 2-3 tablespoons hummus, homemade or store-bought
- Thyme leaves, optional
- Lay the wrap on a plate and dollop the hummus in the middle. Using a butter knife, spread out the hummus evenly over the wrap. Layer the grilled vegetables in the middle of the wrap and sprinkle over some thyme leaves. Roll the wrap up, cut in half, and enjoy!
