Ummmm, it is officially FIVE days before Christmas….
(when did that happen?!)
Between starting the new job and the big snow we got over the weekend, I am feeling woefully unprepared for the big holiday dinner this coming Sunday.
But never fear! I have an amazingly simple side dish that can be done in under thirty minutes and has FIVE INGREDIENTS.
Yep, only five.
Did I mention that it’s also delicious?
So what is this time-saving, simple, five-ingredient side dish?
Thyme Roasted Carrots!
Carrots are probably one of my favorite veggies to roast. First off, there are always big bags of this orange vegetable in the supermarket (hello, convenience!). Second, they lend themselves well to high heat roasting. It brings out their natural sweetness and allows them to almost caramelize. Three, they are done in less that thirty minutes, which means that you can feed your carrot-lovin’ crew in a snap!

… carrots!
Quick Random Story: One summer I ate a pound of baby carrots a day (mindless snacking veggie of choice!). After a few weeks, my mom noticed that the soles of my feet and the palms of my hands had turned orange… carrot orange. After discovering I was turning into a human carrot, there was ban of my favorite veggie in our house (and they didn’t come back until I stopped looking like an Oompa Loompa). Lesson of the day – enjoy this dish, but don’t eat the whole pan (every day) by yourself!
Back to the best side dish ever!!!
Cut the carrots into sticks and toss onto a greased baking sheet.
Drizzle with olive oil (ingredient #2) and sprinkle over salt (#3) and pepper (#4).
Finally, add in a bunch of fresh thyme leaves (ingredient #5). It adds a nice bright flavor that really goes well with the roasted carrots.
Toss everything around to coat and then pop the baking sheet in a 400 degree oven. Roast for 25 minutes, flipping the carrots over halfway.
YUM!
Resist the urge to eat them hot off the baking sheet (I may have burnt my fingertips…).
These babies are definitely holiday dinner material (no one needs to know how easy they were!).

- 5 large carrots, washed, peeled, and cut into sticks
- 1 tablespoon olive oil
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- Cooking spray
- Preheat your oven to 400 degrees. Lightly spray a rimmed baking sheet with cooking spray.
- Place carrot sticks on the baking sheet and coat with oil, salt, pepper, and thyme leaves. Toss to coat.
- Pop the baking sheet into the oven and bake for 25 minutes, flipping the carrots halfway.
- Serve immediately!
