Happy Labor Day, AKA the (un)official last day of summer! *whimper*
Before pumpkins + apples + spice take over the internet, I am pushing out summer food for as long as I can.
Because summer food is laid back food. It’s easy throw-together stuff that is simple, delicious, and meant to be shared with tons of family and friends. Saying goodbye to summer food means saying goodbye to late nights giggling with my friends under the stars, goodbye to lazy happy hours on my front stoop, and goodbye to perfectly fire-roasted marshmallows with my sister. Yeah, I’m not ready to give that up yet.
Which means that today’s blue skies, hot temperatures, and empty agenda is the perfect way to extend summer out a little more. And if you are going to a cookout today and have no idea what to bring, I’ve got the best thing EVER.
Walking Margarita Watermelon.
Watermelon wedges are literally soaked in a margarita mixture and dusted with coarse salt – a boozy treat that is refreshing and a fun [adult] twist on the traditional fruit plate.
Oh, and it can be made right now and sit in the fridge until your friends come tonight.
Because summer is all about relaxing…
This Walking Margarita Watermelon starts with…
… watermelon! This is about a quarter of a melon in this dish. To get the long strips (my favorite way to enjoy it), I halve the melon width-wise (BE SO CAREFUL!). I then put the melon cut side down for stability and then cut it into slices one way. I then turn the cutting board 90-degrees and slice in the other way – this creates long, square (or I guess, rectangular) wedges of watermelon. Pop the melon into a deep-sided baking dish.
Then make a delicious mixture of tequila and lime juice. Mix it together and pour it over the watermelon.
Sprinkle everything with some coarse salt… because what is a margarita without salt?
Pop the melon into the fridge and let it chill/mingle for at least and hour.
Then dig in!

Note – if you are putting this on a cookout food table, please mark it well… this is definitely not a recipe for the kiddos.

- ¼ large watermelon, cut into rectangular wedges (keep the rind on)
- ¼ cup tequila
- Juice of 2 limes
- ¼ teaspoon coarse salt
- Place watermelon wedges into the bottom of a deep-sided baking dish.
- Combing tequila and lime juice in a small bowl. Pour over the watermelon.
- Sprinkle coarse salt over the melon.
- Chill the melon for at least an hour. Enjoy responsibly!
